Craving a sweet pick me up at snack time? These snack bites are healthy, naturally sweet, and easy to make. Perfect for satisfying those cravings while enjoying the health benefits of strawberries.

INGREDIENTS:

  • 2 cups raw cashews
  • 12-15 Medjool dates, chopped (be sure and use enough since the sticky dates bind everything together)
  • 2 teaspoons vanilla extract
  • 1 cup freeze dried strawberries
  • Pinch of sea salt

INSTRUCTIONS:

In a food processor (or blender) pulse cashews until crumbly with a few bigger chunks. Add the dates and pulse until the mixture becomes sticky. Add vanilla and sea salt and pulse to combine. Add the freeze-dried strawberries and pulse until just combined.

Shape 1 or 2 tablespoons of “dough” into balls or squares. Makes around 12 or 24 bites, depending on whether you use 1 or 2 tablespoons per bite. Store in an airtight container in the refrigerator.
